Application: Sucragel XL is a concentrated stretchable oil-in-glycerin emulsion base for creating thickened, gel-textured oils that rinse off easily turning to a milk-like texture. Sucragel is 100% naturally derived blend of sugar based surfactants, vegetable oil derivatives and water.
pH Range: 5-7.5 as supplied. Can be formulated into finished products having a final pH of 4-8.
Usage Levels:
5-10% as a cold-process emulsifier in oil in water emulsions (add Sucragel to oil phase then mix as normal)
5-10% as a hot-process emulsifier in oil in water emulsions (add Sucragel to oil phase then mix as normal)
15-20% for the creation of oily gels (see below for instructions)
Heat Tolerance: This has been designed to make cold-processing possible but can be heated to 80C as a hot-process emulsifier and thickener.

NOTE - YOU WILL NEED AN OVERHEAD MIXER TO GET THE BEST RESULTS WITH THIS INGREDIENT. HAND BLENDERS, WHISKS AND SPOONS WILL LIKELY RESULT IN A FAILED BATCH.
As this ingredient is an emulsion, it is recommended that the product be shaken or pre-mixed prior to pouring and then again prior to adding other ingredients.
Once you have measured out the Sucragel required for your batch start mixing. Mix on a medium to high speed but avoid aerating the mix - you will need an overhead mixer for this ingredient. When well combined slowly add a small proportion of your oil phase, around 6-10% is a good ammount. Give this oil time to mix in before adding any more. Add the next 10-20% slowly, checking that all the gelling agent and oil are mixing together. You should start to see the mixture thickening and becoming glossy and glassy looking. At this point it is safe to start adding the remaining oils and other ingredients as the critical gel swelling point has been exceeded. If your mixture looks watery and lumpy you either added the oils too quickly, added too much at a time or didn't mix with enough speed. If this happens start again and set the thinned batch aside, this can be worked into a more successful batch once you master it.
