Polysorbates are a family of surface-active ingredients based on mono-esters of Sorbitan, a derivative of Sorbitol (derived from corn). The Sorbitan group is then bonded with a fatty acid, typically derived from Palm Oil. Stopping there creates a range of low HLB ingredients that act primarily as emulsifiers. Ethoxylating the mixture raises the HLB (increases the ingredients water-loving capacity) making this group more suitable as solubilisers. This family, the Polysorbates, differ in their HLB due to the size and shape of their water-repelling tails. The heavier the fatty acid tail, the lower the HLB and the less suitable the polysorbate becomes for use as a solubiliser in a water-dominant system.
